#3 Rhubarb

Like with the artichoke, you will have to wait a little bit before you get to enjoy a harvest from this vegetable too. In the first year, you will have to leave the rhubarb alone, as you want it to establish its roots. However, you will be able to see it grow bigger and bigger as the seasons pass, and then you will be able to enjoy it to your heart’s content.

However, it is said that one rhubarb plant can last up to 20 years without needing to be replaced, so it is definitely one of the best perennial vegetables you can add to your garden. Until you have to replace your plant, you will be enjoying all the delicious asparagus stalks in a variety of recipes. Just make sure to discard the leaves properly when you use the vegetable, as they are poisonous.

Another tip is to plant some strawberries too alongside this vegetable. They’re a perennial fruit and vegetable pair that you can use for a ton of dishes!
