9 Best Perennial Vegetables to Plant Now!

#2 Globe artichoke

If you do not want instant gratification and you are okay with waiting for your first harvest, then globe artichokes are the vegetable for you. They can be grown as an annual (meaning you will only use them once) or as a perennial if you protect them properly during the harsh winter months (if you live in a warm state, you will not have this problem).

You should familiarize yourself with the variety that is best for your state’s climate, and after you plant them, you shouldn’t expect a harvest any earlier than 2 years after planting. We know it’s a bit of a wait, but you’ll be able to enjoy the best bites artichokes have to offer all year long after that. Not to mention, it will be very satisfying to finally eat one from your own garden.
