Dandelion

Before you skip over this next edible landscaping idea, please hear us out! Sadly, dandelions have always been treated harshly, which has been unnecessary and unfair! These sunny yellow flowers are technically considered weeds.

But in actuality, they’re edible and offer a wealth of added health benefits. They’re jock-full of minerals, essential vitamins, nutrients, and soluble fiber. All in all, they can do wonders for your overall well-being and health.

Dandelions have a delightful taste and earthy flavor. So it’s perfect to include in a salad, it can also be ground up into a pesto, or you can dry out some leaves and make yourself a cup of tea.

Chard

Chard is easy to spot in a garden by its brilliantly colored stems in yellow, red, orange, and pink and its upright habit and wide leaves. You can harvest those leaves for cooking when they’re about 8 to 10 inches long by cutting them from the base of the stem.

But that’s not all! You can also snip some small, immature leaves to add to your salads. Chard plants can grow rather large: up to 3 feet tall and one and a half feet half wide.

Keeping this in mind, you should plant them at the back of an edible green border or in groups of three in a medium container. You can even work them into an ornamental garden bed that gets full sun to partial shade.
